Method
Cake Preparation
Preheat the Oven
Preheat your oven to 375°F (190°C) and grease a 9-inch round cake pan.
Melt Chocolate and Butter
In a medium saucepan over low heat, melt the dark chocolate and unsalted butter together, stirring until smooth.
Mix in Sugar and Eggs
Remove from heat and whisk in the granulated sugar until combined. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
Add Cocoa Powder
Sift in the cocoa powder and mix until just combined.
Bake the Cake
Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
Cool the Cake
Allow the cake to cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
Ganache Preparation
Heat the Cream
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat.
Melt the Chocolate
Add the dark chocolate to the hot cream, letting it sit for a minute. Stir until the chocolate is completely melted and the mixture is smooth.
Cool the Ganache
Let the ganache cool slightly until it thickens to a pourable consistency.
Top the Cake
Once the cake is completely cool, pour the ganache over the top, allowing it to drip down the sides.
