    Prepare the Filling

    In a mixing bowl, combine cooked lobster meat, ricotta cheese, Parmesan cheese, egg yolk, salt, and black pepper. Mix well until all ingredients are fully incorporated.

    Make the Dough

    On a clean surface, mound the flour and create a well in the center. Add eggs and water into the well. Gradually mix the flour into the eggs using a fork until a dough forms. Knead the dough for about 5-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Roll Out the Dough

    After resting, divide the dough into quarters. Roll out one piece at a time to about 1/16 inch thickness using a pasta machine or rolling pin. Keep the remaining dough covered.

    Fill the Ravioli

    Place small mounds of the lobster filling (about 1 tsp each) on half of the rolled-out dough. Brush around the filling with a bit of water to help seal. Fold the other half of the dough over the filling and press down to seal, cutting out each ravioli with a pasta cutter or knife.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Gently add the ravioli and cook for about 3-4 minutes or until they float to the top. Remove with a slotted spoon.

    Prepare the Crab Sauce

    In a skillet, gently heat some butter over medium heat and add jumbo lump crab meat. Stir and cook for 3-5 minutes. Season with salt and pepper to taste.

    Serve

    Plate the ravioli and spoon the crab sauce over the top. Garnish with fresh herbs if desired.
