Prepare the Filling
In a mixing bowl, combine cooked lobster meat, ricotta cheese, Parmesan cheese, egg yolk, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Roll Out the Dough
After resting, divide the dough into quarters. Roll out one piece at a time to about 1/16 inch thickness using a pasta machine or rolling pin. Keep the remaining dough covered.

Fill the Ravioli
Place small mounds of the lobster filling (about 1 tsp each) on half of the rolled-out dough. Brush around the filling with a bit of water to help seal. Fold the other half of the dough over the filling and press down to seal, cutting out each ravioli with a pasta cutter or knife.

Cook the Ravioli
Bring a large pot of salted water to a boil. Gently add the ravioli and cook for about 3-4 minutes or until they float to the top. Remove with a slotted spoon.

Serve
Plate the ravioli and spoon the crab sauce over the top. Garnish with fresh herbs if desired.
