Preparation Steps

  1. 1

    Prepare the Marinade

In a bowl, mix olive oil, salt, and black pepper. Brush the mixture over the Portobello mushrooms and let them marinate for at least 30 minutes.

  2. 2

    Cook the Vegetables

Chop the onion and bell pepper. In a skillet over medium heat, sauté the pancetta until crispy, then add the onion and bell pepper, cooking until softened. Set aside.

  3. 3

    Grill the Mushrooms

Preheat the grill to medium-high heat. Grill the marinated Portobello mushrooms for about 5-7 minutes on each side, or until tender.

  4. 4

    Prepare the Goat Cheese

Form the goat cheese into small patties. Dip each patty into the egg, then coat with panko breadcrumbs. Fry in a pan with olive oil until golden brown on both sides.

  5. 5

    Assemble the Dish

On each grilled Portobello mushroom, place a generous serving of the sautéed onion, bell pepper, and pancetta mixture. Top with the fried goat cheese patties.
