Fried Oysters

Method

Preparation

  1. 1

    Prepare the Oysters

Rinse the oysters under cold water and shuck them. Pat them dry with paper towels.

  2. 2

    Set Up Breading Station

In one bowl, place the flour seasoned with salt and pepper. In a second bowl, whisk together the egg and buttermilk. In a third bowl, combine the cornmeal with a pinch of salt.

  3. 3

    Bread the Oysters

Dip each oyster first in the flour, then in the egg mixture, and finally coat them with cornmeal.

  4. 4

    Fry the Oysters

In a large skillet, heat the vegetable oil over medium-high heat. Fry the breaded oysters in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

  5. 5

    Make Horseradish Cream

In a small bowl, mix together the sour cream, prepared horseradish, and a pinch of salt.

  6. 6

    Assemble Salad

In a large bowl, combine the romaine, baby greens, fresh corn, and bleu cheese. Drizzle with a bit of oil and season with salt and pepper.

  7. 7

    Serve

Plate the salad and top with fried oysters. Serve with horseradish cream on the side.
