Prepare the Calamari
In a mixing bowl, combine the flour, cornstarch, salt, black pepper, and red pepper flakes. Mix well.

Soak in Buttermilk
Place the cleaned calamari in a separate bowl and cover with buttermilk. Allow it to soak for 30 minutes to tenderize.

Heat the Oil
In a large heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the calamari in the flour mixture until fully coated.

Fry the Calamari
Fry the coated calamari in batches for about 2-3 minutes or until golden brown. Use a slotted spoon to remove the calamari and drain on paper towels.

Serve
Serve the fried calamari hot, topped with grated asiago cheese and a side of horseradish cream. Garnish with lemon wedges.
