Prepare the rice
In a medium saucepan, combine 1 cup of rice and 2 cups of water. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for another 5 minutes, then fluff with a fork.

Make the sauce
In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey (or maple syrup), cornstarch, and water until smooth. Set aside.

Sauté the vegetables
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the onion and sauté for 2-3 minutes until softened. Add the garlic and ginger, and sauté for an additional minute.

Add remaining vegetables
Stir in the bell peppers, broccoli, carrots, and snow peas. Sauté for about 5-7 minutes, stirring frequently until the vegetables are tender-crisp.

Add the sauce
Pour the sauce over the sautéed vegetables and stir well to coat. Cook for an additional 2-3 minutes until the sauce thickens slightly.
Serving

Plate the dish
Serve the vegetable stir fry over a bed of the cooked rice. Enjoy hot!
