For the Calamari

    Prepare the Calamari

    Start by cleaning the calamari. Remove the head and insides, and peel off the outer skin. Cut the calamari tubes into rings, about 1-inch thick.

    Prepare the Breading

    In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

    Create the Wet Mixture

    In another bowl, whisk together the egg and milk until well combined.

    Coat the Calamari

    Dip each calamari ring into the wet mixture first, allowing excess to drip off, then coat with the dry breading mixture. Shake off any excess flour.

    Heat the Oil

    In a large deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the breaded calamari rings to the hot oil, working in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and place on a paper towel-lined plate to drain excess oil.

    In a small bowl, combine the mayonnaise, Sriracha sauce, minced garlic, lemon juice, and salt. Stir until well blended.

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
