Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour to prevent sticking.

  2. 2

    Melt the Chocolate and Butter

In a medium heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave, stirring frequently until smooth.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, whole eggs, and egg yolks until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Add the melted chocolate mixture to the egg mixture, stirring gently to combine. Make sure the chocolate isn't too hot to avoid cooking the eggs.

  5. 5

    Add Flour and Vanilla

Sift the all-purpose flour into the chocolate mixture and add the vanilla extract. Fold gently until just combined.

Baking

  1. 6

    Fill Ramekins

Pour the batter evenly into the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake the Cakes

Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 8

    Cool and Serve

Remove the ramekins from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen, then invert onto plates.

Serving Suggestions

  1. 9

    Dust and Serve

Dust the top of each lava cake with powdered sugar and serve immediately with a scoop of vanilla ice cream.
