Potato Chips

Tortilla Chips

Method

Potato Chips

  1. 1

    Prepare the Potatoes

Wash and peel the potatoes. Use a mandoline slicer or a sharp knife to slice them thinly (about 1/8 inch thick).

  2. 2

    Soak the Slices

Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes. This removes excess starch and helps achieve crispiness.

  3. 3

    Dry the Slices

After soaking, drain the potato slices and pat them dry with a clean kitchen towel or paper towels.

  4. 4

    Heat the Oil

In a deep frying pan or a large heavy-bottomed pot, heat the vegetable oil to 350°F (175°C).

  5. 5

    Fry the Chips

Carefully add a handful of potato slices to the hot oil and fry until golden brown and crispy, about 3-4 minutes. Do not overcrowd the pan.

  6. 6

    Drain and Season

Use a slotted spoon to remove the chips from the oil and transfer them to a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt, paprika, and garlic powder.

  7. 7

    Serve

Allow the chips to cool for a few minutes before serving. Enjoy them on their own or with your favorite dip.

Tortilla Chips

  1. 8

    Prepare the Tortillas

Cut each corn tortilla into 6 equal triangles using a sharp knife or pizza cutter.

  2. 9

    Heat the Oil

In a large frying pan or deep fryer, heat the vegetable oil to 350°F (175°C).

  3. 10

    Fry the Chips

Carefully add a batch of tortilla triangles to the hot oil and fry until they are golden brown and crispy, about 2-3 minutes.

  4. 11

    Drain and Season

Use a slotted spoon to remove the tortilla chips from the oil and transfer them to a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt.

  5. 12

    Serve

Allow the tortilla chips to cool slightly before serving. These are perfect for dipping in salsa, guacamole, or queso.
