Pasta Preparation

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti.

    Cook the Pancetta

    In a large skillet over medium heat, add the pancetta. Cook until crispy and golden brown, about 5-7 minutes. Remove from heat and set aside.

    Prepare the Sauce Mixture

    In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined and creamy.

Combine and Serve

    Combine Ingredients

    Add the drained spaghetti to the skillet with the pancetta. Toss to combine and ensure the pasta is coated with the pancetta fat.

    Add Sauce

    Remove the skillet from heat. Quickly pour in the egg and cheese mixture, tossing the pasta continuously to ensure that the eggs do not scramble. If the sauce is too thick, add reserved pasta water a little at a time until you achieve a creamy consistency.
