Method

Preparing the Salmon

  1. 1

Preheat your grill to medium-high heat (about 400°F or 200°C).

  2. 2

Brush the salmon fillets with olive oil on both sides.

  3. 3

Sprinkle salt and black pepper evenly over the fillets.

  4. 4

Place the salmon fillets skin-side down on the grill.

  5. 5

Grill the salmon for about 6-8 minutes on each side, or until it flakes easily with a fork.

Cooking the Vegetables

  1. 6

While the salmon is grilling, prepare the seasonal vegetables.

  2. 7

Trim the asparagus and slice the bell peppers and zucchini into strips.

  3. 8

Toss the vegetables with a little olive oil, salt, and pepper.

  4. 9

Grill the vegetables on a grill basket or directly on the grill for about 5-7 minutes, turning occasionally until tender.

Making the Lemon Butter Sauce

  1. 10

In a small saucepan, melt the butter over medium heat.

  2. 11

Add the minced garlic and sauté for about 1-2 minutes until fragrant.

  3. 12

Stir in the fresh lemon juice and chopped parsley. Cook for an additional minute.

  4. 13

Remove the sauce from heat and set aside.

Assembly

  1. 14

Once the salmon and vegetables are cooked, plate the salmon fillets.

  2. 15

Arrange the grilled seasonal vegetables alongside the salmon.

  3. 16

Drizzle the lemon butter sauce over the salmon and vegetables before serving.
