Base Preparation

    Heat the Milk and Cream

    In a saucepan, combine the whole milk and heavy cream. Heat over medium heat until just before boiling, stirring occasionally.

    Whisk the Egg Yolks and Sugar

    In a bowl, whisk together the egg yolks and granulated sugar until the mixture becomes pale and creamy.

    Combine Mixtures

    Slowly pour the hot milk and cream mixture into the egg yolk mixture, whisking continuously to temper the eggs.

    Cook the Mixture

    Return the combined mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.

    Add Vanilla

    Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature.

Chill and Churn

    Chill the Base

    Cover the cooled mixture and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld.

    Churn the Gelato

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Add Flavoring

    During the last few minutes of churning, add your desired flavoring (chocolate syrup, strawberry puree, crushed pistachios, or matcha powder) and mix until well incorporated.

    Freeze

    Transfer the gelato to an airtight container and freeze for at least 2 hours to firm up before serving.
