Preparation

  1. 1

    Prepare the Filling

In a large skillet over medium heat, add a splash of oil and sauté the chopped onion until translucent. Add the minced garlic and cook for an additional minute.

  2. 2

    Cook the Meat

Add the ground lamb to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.

  3. 3

    Season the Mixture

Stir in the cumin, coriander, cinnamon, salt, and black pepper. Cook for another 3 minutes, then remove from heat.

  4. 4

    Add Final Ingredients

Mix in the chopped parsley and toasted pine nuts. Let the filling cool slightly.

  5. 5

    Assemble the Rolls

Lay out the pastry sheets and place a generous spoonful of the filling at one end. Roll it up tightly, folding in the sides as you go. Seal the edges with a little water.

  6. 6

    Bake the Rolls

Preheat the oven to 200°C (400°F). Place the rolls on a baking sheet lined with parchment paper and brush with olive oil. Bake for 20-25 minutes or until golden brown.
