Cooking Instructions

1

Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.

2

Brown the Lamb

Add the cubed lamb to the pot and cook until browned on all sides.

3

Add the Vegetables

Stir in the eggplant, zucchini, bell pepper, and chopped tomatoes. Cook for about 5 minutes until the vegetables start to soften.

4

Season the Mixture

Add paprika, cumin, salt, and black pepper. Stir to combine all ingredients.

5

Add Water and Simmer

Pour in the water, bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 30 minutes.

6

Finishing Touches

Once the lamb is tender and the vegetables are cooked through, remove from heat and stir in the chopped parsley before serving.
