Directions

  1. 1

    Prepare the Filling

In a large bowl, combine the ground lamb or beef, chopped onion, minced garlic, parsley, paprika, cumin, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

  2. 2

    Shape the Kebabs

Take a portion of the meat mixture and shape it into a long cylinder, about the length of your pita or lavash. Repeat this for the remaining mixture.

  3. 3

    Cook the Kebabs

In a grill pan or skillet over medium-high heat, cook the kebabs until browned and cooked through, about 10-12 minutes, turning occasionally.

  4. 4

    Prepare the Bread

Warm the pita or lavash bread in a separate pan or oven until soft and pliable.

  5. 5

    Assemble the Beyti Sarma

Place the cooked kebabs on the warm pita or lavash, roll tightly, and slice in half.

  6. 6

    Add Sauce and Serve

Drizzle the tomato sauce over the rolled kebabs, add melted butter, and serve with yogurt on the side. Garnish with lemon wedges.
