Marinate the Beef
In a large bowl, combine the olive oil, minced garlic, ground cumin, ground paprika, salt, and black pepper. Cut the beef sirloin into 1-inch cubes and add it to the marinade. Toss to coat the beef evenly, cover, and refrigerate for at least 1 hour (or overnight for best results).

Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat the grill to medium-high heat.

Assemble the Kebabs
Thread the marinated beef cubes onto the skewers, alternating with the red bell pepper, onion, and cherry tomatoes.

Grill the Kebabs
Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the beef is cooked to your desired level of doneness and the vegetables are tender.

Remove the kebabs from the grill, let them rest for a few minutes, then serve hot with your favorite dipping sauce or over rice.
