Prepare the Chicken
Preheat the oven to 375°F (190°C). Season the chicken breasts with olive oil, salt, black pepper, and minced garlic. Set aside.

Prepare the Eggplants
Slice the eggplants into 1/2 inch thick rounds. Sprinkle with salt and let them sit for about 15 minutes to draw out moisture. Rinse and pat dry.

Sauté Eggplants
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the eggplant slices and sauté until golden brown on both sides, about 5-7 minutes. Remove from skillet and set aside.

Prepare the Tomato Sauce
In the same skillet, add the marinara sauce, chopped fresh tomatoes, red pepper flakes, and additional salt and pepper to taste. Simmer for 5 minutes.

Bake the Chicken
In a baking dish, spread half of the marinara sauce mixture on the bottom. Layer the sautéed eggplants on top, followed by the seasoned chicken breasts. Pour the remaining sauce over the chicken and top with shredded mozzarella cheese.

Finish the Dish
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden. Remove from oven and garnish with fresh basil before serving.
