Pasta Preparation

    Cook the Manicotti

    In a large pot of boiling salted water, cook the manicotti according to package instructions until al dente. Drain and set aside.

Cheese Filling

    Prepare the Cheese Filling

    In a mixing bowl, combine ricotta, mozzarella, parmesan, fontina, egg, salt, black pepper, and parsley. Mix until well blended.

Marinara Sauce

    Make Marinara Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add crushed tomatoes, salt, oregano, and simmer for 15 minutes. Stir in fresh basil before removing from heat.

Besciamella Sauce

    Prepare Besciamella Sauce

    In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk, salt, and nutmeg. Cook until thickened, about 5 minutes.

Assembly and Baking

    Assemble and Bake

    Preheat the oven to 375°F (190°C). Fill each manicotti shell with the cheese filling. Spread a layer of marinara sauce on the bottom of a baking dish, place the filled manicotti on top, and cover with remaining marinara and besciamella sauce. Bake for 25-30 minutes until bubbly and golden.
