Method

Making the Gnocchi

    Prepare Potatoes

    Boil the potatoes in salted water until tender. Drain and let them cool slightly before peeling.

    Make the Dough

    Pass the potatoes through a potato ricer or mash them well. Mix in the egg, flour, and salt until a soft dough forms. If the dough is sticky, add a little more flour.

    Shape Gnocchi

    Divide the dough into portions and roll each into a rope about 1/2 inch thick. Cut into 1-inch pieces and shape with a fork if desired.

Making the Sauce

    Cook Garlic

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add Tomatoes and Cream

    Stir in the crushed tomatoes and cook for 5 minutes. Add heavy cream, mixing well until the sauce is pink. Season with salt, black pepper, and red pepper flakes.

    Finish with Arugula and Cheese

    Stir in the arugula until just wilted. Add the grated Pecorino and Parmesan cheeses, stirring to combine.

Cooking the Gnocchi

    Boil Gnocchi

    In a separate pot, bring salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.

    Combine with Sauce

    Transfer the cooked gnocchi to the pink sauce and gently toss to coat. Serve immediately, garnished with extra cheese if desired.
