Cook the Pasta
Bring a large pot of salted water to a boil. Add the farfalle pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
Prepare the Bacon and Mushrooms
In a large skillet, heat the olive oil over medium heat. Add the bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside. In the same skillet, add the sliced mushrooms and cook until softened.
Create the Sauce
Add the minced garlic to the skillet with the mushrooms and sauté for about 1 minute. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan and Pecorino cheese until melted and combined. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
Combine Pasta and Sauce
Add the cooked farfalle pasta and crispy bacon into the skillet with the sauce. Toss everything together until the pasta is well coated. Season with salt and black pepper to taste.
Serve
Serve the farfalle ai formaggi hot, garnished with additional grated cheese if desired.
