Preparation Steps
Prepare the Sea Bass
Preheat your oven to 400°F (200°C). Clean the sea bass by removing any scales and gutting it if necessary. Rinse under cold water and pat dry.
Make the Salt Mixture
In a large mixing bowl, combine the coarse sea salt with the egg whites. Mix until the salt is evenly moistened and resembles wet sand.
Prepare the Baking Dish
Spread a thin layer of the salt mixture on the bottom of a baking dish that is large enough to hold the sea bass.
Stuff the Sea Bass
Stuff the cavity of the sea bass with fresh herbs, lemon wedges, and any leftover artichoke hearts or cherry tomatoes.
Encase the Sea Bass
Lay the stuffed sea bass on top of the salt layer in the baking dish and cover it completely with the remaining salt mixture, pressing down firmly.
Bake the Sea Bass
Bake in the preheated oven for about 25-30 minutes. The salt crust will harden and the fish will steam in its own moisture.
Prepare the Vegetables
While the fish is baking, if using fresh artichokes, clean and steam them until tender. Sauté the cherry tomatoes in olive oil until they burst, seasoning with salt and pepper to taste.
Serve
Once the sea bass is done, carefully remove it from the oven. Break the salt crust open and carefully lift the fish out. Serve with the sautéed tomatoes and steamed artichokes on the side.
