    Make the Choux Pastry

    In a saucepan, combine water, butter, and salt. Bring to a boil.

    Add Flour

    Remove from heat, add flour all at once, and stir vigorously until a smooth dough forms.

    Incorporate Eggs

    Let the dough cool slightly, then add eggs one at a time, mixing well after each addition until smooth and glossy.

    Pipe the Choux

    Preheat the oven to 200°C (400°F). Pipe the dough onto a baking sheet lined with parchment paper.

    Bake

    Bake for 25-30 minutes until golden brown and puffed. Let cool.

    Prepare the Filling

    In a double boiler, melt the dark chocolate. In a separate bowl, whip the heavy cream until soft peaks form.

    Combine Filling Ingredients

    Fold the melted chocolate and hazelnut paste into the whipped cream until well combined. Add powdered sugar to taste.

    Fill the Choux

    Once the choux are cool, cut a small hole in the bottom and fill with the chocolate hazelnut mixture using a piping bag.
