Prepare the Broth

In a saucepan, heat the chicken or seafood broth over low heat and keep it warm.

Sauté the Aromatics

In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the shallots and sauté until translucent, about 3 minutes. Add the garlic and cook for an additional minute.

Cook the Mushrooms

Add the sliced mushrooms to the skillet and cook until they are browned and tender, about 5-7 minutes. Season with salt and black pepper.

Toast the Rice

Stir in the Arborio rice and cook for 2-3 minutes until the rice is lightly toasted.

Deglaze with Wine

Pour in the dry white wine and cook until it is mostly absorbed by the rice, stirring frequently.

Add the Broth Gradually

Begin adding the warm broth, one ladle at a time, stirring constantly and allowing the rice to absorb the liquid before adding more. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.

Finish with Lobster and Cheese

Once the rice is cooked, gently fold in the chopped lobster meat, the remaining tablespoon of butter, and the grated Parmesan cheese. Adjust seasoning with salt and pepper.

Garnish and Serve

Remove from heat, garnish with fresh parsley, and serve immediately.
