Activate Yeast
In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.

Mix Dough
In a large mixing bowl, combine flour, sugar, and kosher salt. Add the yeast mixture and melted butter. Mix until a dough forms.

Knead Dough
Turn the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape Pretzel Bites
Preheat the oven to 425°F (220°C). Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a rope and cut into bite-sized pieces.

Prepare Baking Soda Bath
In a large pot, bring 10 cups of water and the baking soda to a boil. Carefully add the pretzel bites in batches, boiling for about 30 seconds each.

Bake Pretzel Bites
Place the boiled pretzel bites on a parchment-lined baking sheet. Sprinkle with coarse sea salt and bake for 12-15 minutes until golden brown.
Beer Cheese Dip

Prepare Cheese Dip Mixture
In a medium saucepan over medium heat, combine cream cheese and beer. Stir until the cream cheese is melted and smooth.

Add Cheese and Spices
Gradually add the sharp cheddar cheese, stirring continuously until melted and smooth. Add garlic powder, onion powder, mustard, paprika, and season with salt and pepper to taste.

Remove from heat and transfer to a serving bowl. Serve warm alongside the pretzel bites.
