Fish Preparation

Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer (or sparkling water) until the batter is smooth and free of lumps.

Dredge the Fish
Pat the fish fillets dry with paper towels. Dip each fillet into the batter, ensuring they are fully coated.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fish
Carefully place the battered fish fillets in the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

Prepare the Potatoes
Peel the potatoes and cut them into thick strips to resemble fries.

In a separate pot, heat the vegetable oil over medium-high heat. Once hot, carefully add the potato strips in batches, frying for about 5-7 minutes until golden brown and crispy. Remove and drain on paper towels. Sprinkle with salt to taste.

In a small bowl, combine the mayonnaise, dill pickles, capers, lemon juice, and fresh dill. Stir well and season with salt to taste.
