Pretzel Dough

Method

Pretzel Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix Dough

In a large bowl, combine flour and salt. Add the activated yeast mixture and melted butter. Mix until a dough forms.

  3. 3

    Knead

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

  4. 4

    First Rise

Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shaping and Baking

  1. 5

    Preheat Oven

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. 6

    Shape Pretzels

Punch down the risen dough, divide it into 3 equal pieces. Roll each piece into a long rope, about 12-14 inches long, then shape into a pretzel.

  3. 7

    Boil in Baking Soda Solution

In a large pot, bring 10 cups of water and baking soda to a boil. Boil each pretzel for 30 seconds, then remove and place on the baking sheet.

  4. 8

    Bake

Sprinkle coarse salt on top of each pretzel. Bake for 12-15 minutes or until golden brown.

Guinness Beer Cheese Preparation

  1. 9

    Combine Ingredients

In a medium saucepan over medium heat, combine shredded cheddar, cream cheese, Guinness, garlic powder, onion powder, mustard powder, salt, and pepper.

  2. 10

    Melt and Stir

Stir continuously until the cheese is fully melted and the mixture is smooth. Adjust seasoning as needed.

Serving

  1. 11

    Serve

Transfer the pretzel sticks to a serving platter and serve warm with the Guinness beer cheese on the side.
