    Cook the Rice

    In a large pot, bring the vegetable broth to a boil. Add the basmati rice, reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.

    Sauté Vegetables

    In a large skillet, heat a bit of oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add diced carrots and peas, cooking until tender.

    Add Shrimp and Seasoning

    To the skillet, add the shrimp and curry powder. Cook until the shrimp turn pink, about 3-4 minutes. Season with salt and pepper.

    Combine Rice and Coconut Milk

    Once the rice is cooked, add it to the skillet along with the coconut milk. Stir to combine and heat through for a few minutes.

    Fry the Eggs

    In another pan, fry the eggs sunny-side up or to your desired doneness.

    Serve

    Serve the shrimp kedgeree in bowls, topped with the fried eggs and garnished with fresh cilantro.
