    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions, along with a pinch of salt, and cook, stirring occasionally, until the onions are caramelized and golden brown, about 25-30 minutes.

    Add Garlic and Herbs

    Add the minced garlic, thyme, and bay leaf to the pot. Cook for an additional 2-3 minutes until fragrant.

    Add Broth

    Pour in the beef broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15-20 minutes. Season with salt and black pepper to taste.

    Prepare the Croutons

    While the soup is simmering, slice the baguette into thick slices. Toast in the oven at 375°F (190°C) for about 10 minutes, or until golden brown.

    Serve with Cheese

    Ladle the soup into bowls, place a toasted baguette slice on top of each bowl, and sprinkle with Swiss cheese. Place under the broiler for a few minutes until the cheese is melted and bubbly.
