    Prepare the Chicken

    Season the chicken breasts with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side or until fully cooked. Remove from heat and let it rest for a few minutes before slicing.

    Assemble the Panini

    Slice the ciabatta bread in half horizontally. Spread 2 tablespoons of house-made pesto on the inside of each half. Layer the sliced chicken, mozzarella cheese, and roasted red peppers on one half of the ciabatta.

    Press the Panini

    Place the other half of the ciabatta on top and brush the outside with the remaining olive oil. Heat a panini press or a skillet over medium heat. If using a skillet, you can place a heavy pan on top to press the sandwich. Cook for about 3-5 minutes on each side or until the bread is golden brown and the cheese is melted.

    Serve

    Remove the panini from the heat, let it cool for a minute, then slice it in half and serve warm.
