Prepare the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated. Press the mixture into the bottom of a 9-inch springform pan to form the crust.

Make the Cheesecake Filling
In a large bowl, beat the cream cheese until smooth. Gradually add the sugar, mixing until well combined. Add the sour cream and vanilla extract, mixing until smooth. Add the eggs one at a time, mixing on low speed until just combined after each addition.

Combine and Bake
Pour the cheesecake filling over the prepared crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly.

Cool and Chill
Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for about 1 hour. Remove from the oven and refrigerate for at least 4 hours, or overnight for best results.

Serve
Once chilled, remove the cheesecake from the springform pan. Top with fresh berries before serving. Slice and enjoy!
