Prepare the Grits
In a medium saucepan, bring water to a boil. Add a pinch of salt and slowly stir in the Old Mill of Guilford grits. Reduce heat to low and cook, stirring frequently, until the grits are thick and creamy (about 20-25 minutes). Remove from heat and stir in 1 tablespoon of butter. Set aside.

Make the Shrimp and Sauce
In a large skillet over medium heat, melt the remaining butter. Add minced garlic and sauté until fragrant (about 1 minute). Add the shrimp and Cajun spice mix, cooking until the shrimp turn pink (about 3-4 minutes).

Add Wine and Tomatoes
Pour in the white wine and add the halved cherry tomatoes. Let simmer for about 5 minutes, until the sauce slightly thickens. Season with salt and black pepper to taste.
