Prepare the Fries or Tots

Wash and cut the russet potatoes into fries or use pre-made tater tots. Rinse and soak in cold water for at least 30 minutes. Drain and pat dry.

Fry the Potatoes

In a large pot, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels, seasoning with salt.

Make the Cheddar Mornay Sauce

In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes. Gradually add milk, stirring continuously until thickened. Stir in shredded cheddar, mustard powder, and black pepper until smooth.

Make the Buttermilk Ranch

In a bowl, whisk together buttermilk, mayonnaise, garlic powder, dried dill, salt, and black pepper until smooth. Adjust seasoning to taste.

Assemble the Loaded Fries or Tots

On a serving platter, layer the fried potatoes or tots. Pour the cheddar mornay sauce over the top, followed by shredded cheddar, crumbled bacon, and sliced scallions. Serve with buttermilk ranch on the side.
