Prepare the Pasta
In a large pot, bring salted water to a boil. Add the pasta shells and cook according to package instructions until al dente. Drain and set aside.

Cook the Bacon
In a large skillet over medium heat, cook the bacon until crispy. Remove from the skillet, chop into pieces, and set aside. Leave the bacon fat in the skillet.

Add Cheese and Seasonings
Remove the skillet from heat and stir in the shredded cheddar cheese until melted. Season with salt and black pepper to taste.

Combine Ingredients
Add the cooked pasta shells and chopped bacon to the cheese sauce, stirring until well combined.

Prepare for Baking
Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture into a baking dish.

Top with Panko
Sprinkle the panko breadcrumbs evenly over the top of the mac and cheese.

Bake
Bake in the preheated oven for 20-25 minutes until the top is golden brown and crispy.

Garnish and Serve
Remove from the oven, sprinkle chopped scallions on top, and serve hot.
