Prepare the Gluten-Free Crust
In a large bowl, mix gluten-free flour and sugar. Cut in the butter until the mixture resembles coarse crumbs. Add cold water, one tablespoon at a time, until the dough comes together. Press the dough into a tart pan and prick the bottom with a fork.

Bake the Crust
Preheat the oven to 350°F (175°C). Bake the crust for 15-20 minutes or until lightly golden. Remove from the oven and let it cool.

Make the Cream Cheese Filling
In a medium bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined.

Assemble the Tart
Spread the cream cheese filling evenly over the cooled crust. Arrange the sliced peaches on top of the filling in a decorative pattern.

Prepare the Whipped Cream
In a mixing bowl, beat the whipping cream, sugar, and vanilla extract until soft peaks form.

Serve
Top the tart with whipped cream just before serving, or serve the whipped cream on the side.
