    Prepare the Lamb Patties

    In a bowl, combine the ground lamb with salt and black pepper. Mix well and form into two equal patties, each weighing 1/4 lb.

    Grill the Patties

    Preheat your grill to medium-high heat. Once hot, place the lamb patties on the grill and cook for about 4-5 minutes on each side, or until they reach your desired doneness. Place a slice of smoked Gouda on each patty during the last minute of grilling to melt the cheese.

    Prepare the Toppings

    While the patties are grilling, prepare the toppings. Slice the tomato and cucumber, and chop the Kalamata olives.

    Assemble the Cheeseburgers

    Toast the burger buns lightly on the grill. On the bottom half of each bun, layer a handful of arugula, a grilled lamb patty with melted Gouda, slices of tomato, cucumber, and a sprinkle of Kalamata olives. Spread harissa and tzatziki sauce on the top half of the buns, then place them on top of the assembled patties.

    Serve the lamb cheeseburgers immediately with your choice of side dishes.
