Marinate the Chicken
In a bowl, mix honeycup mustard, olive oil, salt, and black pepper. Coat the chicken breasts in the mixture and let them marinate for at least 30 minutes in the refrigerator.

Cook the Bacon
In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove and drain on paper towels.

Grill the Chicken
Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes per side, or until they reach an internal temperature of 165°F (75°C).

Prepare the Rolls
While the chicken is grilling, slice the challah rolls in half and toast them lightly on the grill.

Assemble the Sandwich
Once the chicken is cooked, place a slice of white cheddar cheese on each chicken breast until melted. Layer with lettuce, sliced tomato, and crispy bacon on the bottom half of the toasted challah roll. Top with the chicken breast and cover with the other half of the roll.
