Filet Medallions

Garlic Mashed Potatoes

Grilled Asparagus

Method

Filet Medallions

1

Prepare the Medallions

Season the filet medallions with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the medallions for about 3-4 minutes on each side for medium-rare. Remove from pan and let rest.

Bourbon Glaze

2

Make the Glaze

In the same skillet, pour in the bourbon and scrape up any browned bits. Add brown sugar, soy sauce, minced garlic, and Worcestershire sauce. Simmer for 5 minutes until thickened. Mix cornstarch and water, add to the skillet, and cook until the glaze thickens, about 2 minutes.

Garlic Mashed Potatoes

3

Prepare the Mashed Potatoes

Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add minced garlic, butter, milk, and salt. Mash until creamy and smooth.

Grilled Asparagus

4

Grill the Asparagus

Toss the trimmed asparagus with olive oil, salt, and black pepper. Grill on medium-high heat for about 5 minutes, turning occasionally until tender.
