Cooking the Pork

In a heavy-bottomed pot, combine the pork shoulder, duck fat, shallots, garlic, thyme, bay leaves, salt, and black pepper. Cook over low heat, covered, for about 2 hours, stirring occasionally, until the pork is tender and easily shredded.

Remove the pot from the heat and take out the bay leaves. Using two forks, shred the pork into small pieces while mixing it with the fat and juices in the pot.
