Preparation Steps

1. Prepare the Chicken

Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound the chicken to an even thickness of about 1/2 inch.

2. Season the Chicken

Drizzle the pounded chicken with olive oil, then season both sides with salt and black pepper. Lay sage leaves on one side of each piece of chicken.

3. Cook the Chicken

In a large skillet over medium heat, add a bit more olive oil if necessary. Place the chicken in the skillet, sage side up, and cook for about 4-5 minutes on each side, or until the chicken is cooked through and has a nice golden color.

4. Add Lemon

During the last minute of cooking, squeeze the juice of the lemon over the chicken. Allow the chicken to absorb the lemon flavor.

5. Serve

Remove the chicken from the skillet, let it rest for a couple of minutes, then slice and serve with additional lemon wedges if desired.
