Mousse de Foies de Volaille

Method

Preparation Steps

1

Prepare the Chicken Livers

Clean the chicken livers by removing any connective tissue and rinsing them under cold water. Pat dry with paper towels.

2

Cook the Livers

In a skillet, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until soft and translucent. Add the chicken livers and cook until they are browned on the outside but still slightly pink inside, about 5-7 minutes.

3

Deglaze

Pour in the cognac or brandy, and allow it to simmer for about 2 minutes, scraping up any bits stuck to the bottom of the pan. Remove from heat and let cool slightly.

4

Blend the Mixture

Transfer the liver mixture to a food processor. Add the heavy cream, salt, and black pepper. Blend until smooth and creamy.

5

Incorporate Pistachios

Stir in the chopped pistachios and parsley. Adjust seasoning to taste.

6

Chill the Mousse

Transfer the mousse to a serving dish or individual ramekins. Cover with plastic wrap and refrigerate for at least 2 hours to set.

7

Serve

Serve chilled, garnished with additional pistachios and parsley if desired.
