Truffle Preparation

    Prepare the Ganache

    Chop the dark chocolate into small pieces and place it in a mixing bowl. In a small saucepan, heat the heavy cream and unsalted butter over medium heat until it just begins to simmer. Pour the hot cream mixture over the chocolate and let it sit for 2 minutes to soften. Then, stir until the chocolate is completely melted and the mixture is smooth. Add the vanilla extract and mix well.

    Cover the bowl with plastic wrap and refrigerate the ganache for at least 2 hours, or until it is firm enough to scoop.

    Once the ganache is chilled, use a melon baller or a small spoon to scoop out small amounts of the mixture. Roll the scoops between your hands to form them into balls.
