Method

Choux Pastry Preparation

  1. 1

    Prepare the Dough

In a saucepan, combine water and butter. Bring to a boil over medium heat. Once boiling, remove from heat and quickly stir in flour and salt until combined. Return to heat and cook for about 1-2 minutes until the dough forms a ball and pulls away from the sides of the pan.

  2. 2

    Add Eggs

Transfer the dough to a mixing bowl. Let it cool slightly, then add eggs one at a time, mixing well after each addition until the mixture is smooth and glossy.

  3. 3

    Shape and Bake

Preheat the oven to 400°F (200°C). Using a pastry bag fitted with a large round tip, pipe small mounds of dough onto a baking sheet lined with parchment paper. Bake for 20-25 minutes until puffed and golden brown. Let cool completely.

Maple Cream Filling Preparation

  1. 4

    Whip the Cream

In a mixing bowl, combine heavy cream, maple syrup, and vanilla extract. Whip until soft peaks form. Refrigerate until ready to use.

  2. 5

    Fill the Choux

Using a small knife, make a small hole in the bottom of each cooled puff. Fill each puff with the maple cream using a pastry bag.

Maple Glaze Preparation

  1. 6

    Make the Glaze

In a bowl, mix powdered sugar, maple syrup, and milk until smooth. Adjust consistency with more milk if necessary.

  2. 7

    Glaze the Profiteroles

Drizzle or dip the filled profiteroles in the maple glaze. Allow to set before serving.
