Prepare the Cream Mixture
In a saucepan, heat the heavy cream and brewed coffee over medium heat until just simmering. Remove from heat and stir in vanilla extract.

Mix the Egg Yolks and Sugar
In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is smooth and pale.

Combine and Cook
Slowly pour the hot cream mixture into the egg yolk mixture while whisking constantly to prevent curdling. Once combined, strain the mixture through a fine-mesh sieve into a large measuring cup.

Bake the Custards
Preheat the oven to 325°F (160°C). Pour the custard mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes, or until the custards are set but still slightly wobbly in the center.

Chill the Custards
Remove the ramekins from the water bath and let them cool to room temperature. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.

Caramelize the Sugar
When ready to serve, sprinkle a thin layer of brown sugar on top of each custard. Using a kitchen torch, caramelize the sugar until it melts and forms a crispy crust. If you don’t have a torch, place the ramekins under a broiler for 1-2 minutes, watching closely to prevent burning.
