Method

Cooking Pasta

Boil Water

In a large pot, bring 4 liters of water to a boil over high heat.

Add Salt

Once the water is boiling, add 1 tablespoon of salt to the water.

Cook Spaghetti

Add 200g of spaghetti to the boiling water. Cook according to package instructions, usually around 8-10 minutes, stirring occasionally.

Drain Pasta

Once cooked al dente, reserve 1 cup of pasta water, then drain the spaghetti in a colander.

Toss with Olive Oil

Transfer the drained spaghetti back to the pot and toss with 1 tablespoon of olive oil to prevent sticking.

Making Sauce

Heat Olive Oil

In a separate saucepan, heat 2 tablespoons of olive oil over medium heat.

Sauté Garlic

Add the minced garlic cloves and sauté for about 1 minute until fragrant, being careful not to burn.

Add Crushed Tomatoes

Pour in the 400g of crushed tomatoes and stir well to combine with the garlic.

Season the Sauce

Add 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1 teaspoon of sugar, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper. Stir to combine.

Simmer

Reduce the heat to low and let the sauce simmer for about 15 minutes, stirring occasionally.

Combining Pasta and Sauce

Add the cooked spaghetti to the sauce, tossing to coat the pasta evenly. If the sauce seems too thick, add a little reserved pasta water until desired consistency is reached.

Serve

Plate the pasta, sprinkling with 50g of grated Parmesan cheese and garnishing with fresh basil leaves before serving.
