Dough Preparation
Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Allow to sit for about 5-10 minutes until frothy.
Mix Dough Ingredients
In a large mixing bowl, combine all-purpose flour and salt. Create a well in the center and add the yeast mixture and olive oil. Mix until a dough begins to form.
Knead Dough
Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
Let Dough Rise
Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour, or until doubled in size.
Filling Preparation
Prepare Filling
In a mixing bowl, combine ricotta cheese, mozzarella cheese, parmesan cheese, cooked spinach, salami, black olives, and Italian seasoning. Mix well until all ingredients are evenly distributed.
Assembly and Baking
Preheat Oven
Preheat your oven to 450°F (232°C).
Shape Calzones
Once the dough has risen, punch it down and divide it into 4 equal portions. Roll each portion into a circle about 8 inches in diameter.
Fill Calzones
Place a generous amount of filling on one half of each dough circle. Fold the other half over the filling and crimp the edges to seal.
Prepare for Baking
Brush the tops of the calzones with beaten egg and sprinkle with grated parmesan cheese.
Bake Calzones
Place the calzones on a baking sheet lined with parchment paper and bake in the preheated oven for 15-20 minutes or until golden brown.
Cool and Serve
Remove from the oven and let cool for a few minutes before slicing. Serve warm.
