    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into it. Add the olive oil. Using a fork, gradually incorporate the flour into the eggs until a dough forms.

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Filling

    Prepare the Filling

    In a skillet over medium heat, add a tablespoon of olive oil. Sauté the minced garlic for about 1 minute until fragrant. Add the chopped mushrooms and spinach, cooking until the mushrooms are soft and the spinach is wilted, about 5 minutes. Remove from heat and let cool.

    In a bowl, combine the ricotta cheese, sautéed mushrooms and spinach, grated Parmesan cheese, salt, and black pepper. Mix until well combined.

    Divide the rested dough into quarters. Roll out one piece at a time on a floured surface until thin (about 1/16 inch thick). Cut into squares, approximately 3x3 inches.

    Place a teaspoon of filling in the center of each square. Moisten the edges with water and fold over to form a triangle. Press to seal, ensuring there are no air pockets.
