Dough Preparation
- 1
Make the Dough
In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Mix well.
- 2
Cut in the unsalted butter until the mixture resembles coarse crumbs.
- 3
Add the egg, white wine (or vinegar), and water to the mixture. Stir until a dough forms.
- 4
Knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and refrigerate for at least 1 hour.
Filling Preparation
- 5
Prepare the Filling
In a mixing bowl, combine the ricotta cheese, powdered sugar, vanilla extract, cinnamon, and chocolate chips.
- 6
Mix until smooth and well combined. Refrigerate the filling until ready to use.
Frying
- 7
Fry the Cannoli Shells
In a deep pot, heat vegetable oil to 350°F (175°C).
- 8
Roll out the dough to about 1/8 inch thick and cut into circles (about 4 inches in diameter).
- 9
Wrap each circle around a cannoli tube and seal the edges with a bit of egg wash.
- 10
Carefully place the wrapped tubes in the hot oil and fry until golden brown, about 2-3 minutes.
- 11
Remove the shells from the oil and drain on paper towels. Let cool completely before removing the tubes.
Assembly
- 12
Fill and Garnish
Once the shells are cool, use a piping bag to fill each cannoli shell with the ricotta filling.
- 13
Dust the filled cannoli with powdered sugar and sprinkle with chopped pistachios or chocolate shavings.
