Dough Preparation
1. Make the Dough
In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Mix well.
2. Cut in the unsalted butter until the mixture resembles coarse crumbs.
3. Add the egg, white wine (or vinegar), and water to the mixture. Stir until a dough forms.
4. Knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and refrigerate for at least 1 hour.

In a mixing bowl, combine the ricotta cheese, powdered sugar, vanilla extract, cinnamon, and chocolate chips.
6. Mix until smooth and well combined. Refrigerate the filling until ready to use.
Frying
7. Fry the Cannoli Shells
In a deep pot, heat vegetable oil to 350°F (175°C).
8. Roll out the dough to about 1/8 inch thick and cut into circles (about 4 inches in diameter).
9. Wrap each circle around a cannoli tube and seal the edges with a bit of egg wash.
10. Carefully place the wrapped tubes in the hot oil and fry until golden brown, about 2-3 minutes.
11. Remove the shells from the oil and drain on paper towels. Let cool completely before removing the tubes.
Assembly

Once the shells are cool, use a piping bag to fill each cannoli shell with the ricotta filling.
13. Dust the filled cannoli with powdered sugar and sprinkle with chopped pistachios or chocolate shavings.
