In three separate shallow dishes, place the flour, beaten eggs, and bread crumbs.

Dredge each veal cutlet in flour, shaking off the excess, then dip in beaten eggs, and finally coat with bread crumbs.

In a large skillet, heat the olive oil over medium-high heat until hot.
