Prepare the Broth

Combine Ingredients
In a large pot, add the chicken broth, diced carrots, diced celery, diced onion, minced garlic, bay leaves, dried thyme, salt, and black pepper.

Simmer the Broth
Bring the mixture to a boil over medium-high heat. Once boiling, reduce heat to low and let it simmer uncovered for about 30 minutes.

Strain the Broth
After simmering, remove the pot from heat. Strain the broth through a fine-mesh sieve to remove the vegetables and bay leaves. Return the clear broth to the pot and keep it warm.
Cook the Tortellini

Add Tortellini
Bring the strained broth back to a gentle boil. Add the fresh chicken-filled tortellini to the boiling broth.

Cook Tortellini
Cook the tortellini according to package instructions, usually about 3-5 minutes or until they float to the top.
Serve

Garnish and Serve
Once the tortellini are cooked, ladle the soup into bowls. Top with grated Parmesan cheese and chopped fresh parsley before serving.
