Marinate the Chicken
In a bowl, combine soy sauce, honey, minced garlic, and grated ginger. Whisk together until well mixed. Cut the chicken breast into bite-sized pieces and add to the marinade. Let it marinate for at least 30 minutes or up to 2 hours in the refrigerator.

Prepare the Vegetables
While the chicken is marinating, chop the bell peppers into strips and prepare the broccoli florets. Set aside.

Cook the Chicken
Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken (reserve marinade) and cook for about 5-7 minutes until cooked through and browned, stirring occasionally.

Add Vegetables
Once the chicken is cooked, add the bell peppers and broccoli florets to the skillet. Stir-fry for an additional 5-7 minutes until the vegetables are tender but still crisp.

Add Sauce
Pour the reserved marinade over the chicken and vegetables. Stir well to coat and let it cook for another 2-3 minutes until the sauce thickens slightly.

Serve the stir-fry over cooked rice. Garnish with sesame seeds and sliced green onions, if using. Add red pepper flakes for extra heat, if desired.
